Ferni | Persian rice flour pudding

Ferni or Persian rice flour pudding is a creamy, smooth, and mildly sweet dessert made with 4 simple ingredients that takes less than 30 minutes to prepare.

INGREDIENTS

· 2 cups milk cold

· 2 heaping tablespoons rice flour

· 4 tbsp sugar

· 2 tbsp rose water

· Slivered pistachios for serving

· edible dried rose petals for serving

INSTRUCTIONS

1. In a saucepan or pot combine cold milk, rice flour, and sugar. Whisk until rice flour is fully dissolved in milk. Put the mixture over medium heat and continue to stir until the mixture starts to bubble up. Stir continuously so the rice flour will not get lumpy.

2. Add rose water and keep stirring for about 10–15 minutes on medium-low heat until the pudding has a thick and creamy texture. Spoon it into serving dishes while it is hot. Ferni is served both hot and cold. If you like your dessert cold, put the serving dishes in the refrigerator for a few hours after filling. Garnish Ferni with cinnamon, dried edible rose petals, or slivered pistachios.
