Kookoo Sabzi | Persian herb frittata

Kookoo Sabzi or Persian herb frittata is an easy-to-make pan-fried dish loaded with fragrant herbs. It is typically made with eggs, herbs, spices, walnuts, and dried barberries.

INGREDIENTS

· 400 grams Kookoo herb mix (200 grams chives, 100 grams parsley, 50 grams cilantro, 50 grams dill finely chopped

· 5 eggs beaten

· 2 tbsp walnuts chopped

· 2 tbsp dried barberries

· Oil for the pan

· 1/2 tsp turmeric

· 1 tbsp all-purpose flour

· Salt and pepper to taste

INSTRUCTIONS

1. Wash the herbs, remove the stems, and let them dry thoroughly on a clean kitchen towel. Chop the herbs with a sharp knife. In a large bowl, beat eggs with a whisk.

2. Add chopped herbs, turmeric, salt, pepper, and flour and whisk until frothy.

3. Mix in crushed walnuts and barberries.

4. Heat up a little oil in a non-stick pan. Add the mixture to the pan and spread it evenly. cover and cook on the stovetop over medium heat for about 10–15 minutes or until set around the edges and center.

5. Remove from the heat and carefully quarter the frittata in the pan. Then flip each piece and cook uncovered for another 10–15 minutes or until the frittata is cooked thoroughly.
